Spaghetti with Zucchini and Pine Nuts

Would you like a new and different pasta sauce?
Vegeta brings you an easy to make, delicious idea. Parmesan, swiss chard and pine nuts will awaken your taste buds and the spaghetti will complete that Mediterranean taste.

Ingredients

50 ml olive oil
1 onion, sliced
200 g zucchini, diced
1 celery stick, chopped
2 cloves of garlic, crushed
300 g swiss chard
1 tablespoon Vegeta Gourmet Stock Powder
½ teaspoon ginger – powder from
30 g pine nuts
1 tablespoon parmesan cheese, grated
300 g spaghetti

Preparation

  1. In olive oil, fry the onion, zucchini, celery and garlic.
  2. In hot, lightly salted water cook swiss chard, only for a few minutes, then strain the water and chop roughly.

This can then be added to cooked vegetables.

  1. Sprinkle Vegeta Gourmet Stock Powder and ginger over this mixture and continue cooking for another 5 minutes, or until the liquid has evaporated.
  2. Towards the end of the cooking process, stir through pine nuts and parmesan cheese.
  3. Cook the spaghetti, strain the water and mix with prepared sauce.

Serving

Serve the spaghetti warm with grated parmesan cheese.
If you wish, you can even add 50 ml of white wine.
