Seafood Soup

Even though soups are usually regarded as a winter recipe, this preparation idea is actually perfectly suited for the warmer months. Created using the freshest seafood, tomato and Vegeta Chicken Stock Powder, it’s a great simple and healthy meal.

Ingredients

1 kg mussels, cleaned
30 ml oil
400 g white fish fillets, cut in pieces
3 tablespoons olive oil
3 - 4 middle sized brown onions, chopped
3 garlic cloves, chopped
800 g tomato (canned, chopped)
1/2 teaspoon saffron
2 bay leaf
1 teaspoon dried thyme
2 teaspoons sugar
100 ml pureed tomato
1.5 L water
2 tablespoons Vegeta Chicken Stock Powder
200 ml white wine

Preparation

  1. Heat up the oil in a pan, and cook onion and garlic until onion softens.
  2. Add in the tomato (canned), saffron, bay leaf, thyme, sugar, pureed tomato, water and finally Vegeta Chicken Stock Powder. Cook on mild heat for 20 minutes.
  3. Then add in mussels and cook covered for another 5 minutes.
  4. Finally, add in the fish and wine, and continue cooking until the fish softens.

Serving

This dish can be served with garlic bread.
