Seafood Soup
Even though soups are usually regarded as a winter recipe, this preparation idea is actually perfectly suited for the warmer months. Created using the freshest seafood, tomato and Vegeta Chicken Stock Powder, it’s a great simple and healthy meal.

Ingredients
| 4 | |
| 1 kg | mussels, cleaned |
| 30 ml | oil |
| 400 g | white fish fillets, cut in pieces |
| 3 tablespoons | olive oil |
| 3 - 4 | middle sized brown onions, chopped |
| 3 | garlic cloves, chopped |
| 800 g | tomato (canned, chopped) |
| 1/2 teaspoon | saffron |
| 2 | bay leaf |
| 1 teaspoon | dried thyme |
| 2 teaspoons | sugar |
| 100 ml | pureed tomato |
| 1.5 L | water |
| 2 tablespoons | Vegeta Chicken Stock Powder |
| 200 ml | white wine |
Preparation
- Heat up the oil in a pan, and cook onion and garlic until onion softens.
- Add in the tomato (canned), saffron, bay leaf, thyme, sugar, pureed tomato, water and finally Vegeta Chicken Stock Powder. Cook on mild heat for 20 minutes.
- Then add in mussels and cook covered for another 5 minutes.
- Finally, add in the fish and wine, and continue cooking until the fish softens.
Serving
This dish can be served with garlic bread.
