This salad makes a great side dish or can be a light meal on a hot day. It will fill the need for light and refreshing brunch or dessert.
This recipe has been developed in accordance with the Heart Foundation recipe development guidelines.
- Place the sultanas in a bowl, cover with hot water and let stand for 20 minutes, then drain. Add the walnuts and mix through.
- In a pan melt the margarine spread. Add carrots, sugar and Vegeta Delight Stock. Cover with water and simmer until the liquid evaporates (about 10 minutes).
- In a bowl combine carrots, sultanas with walnuts, grapes, add pepper and mix through.
Serve the salad straight away, while still warm.
Do not cover the pan, when cooking the carrots.
