This salad is quick and easy to make, as prawns do not need a lot of preparation. Salad that will seduce everybody with its taste.
This recipe has been developed in accordance with the Heart Foundation recipe development guidelines.
- Boil the water and cook the prawns for 5 minutes. Remove from water and let cool.
- Place lettuce in a bowl, add mint and basil and gently mix through.
- Dressing: In a bowl mix olive oil with lemon rind, lemon juice, chilli and Vegeta Delight stock and stir.
- Pour few tablespoons of the dressing over the prawns and let stand for 5 minutes.
On a serving plate arrange the salad, drizzle over with some dressing, add the prawns and mango and then drizzle with remainder of the dressing, then serve.
