Pork Fillets in Chocolate Sauce
This recipe is for anyone that likes to experiment with unusual combination of flavours, this time pork fillets with quality chocolate (we recommend one with 70 percent cocoa).

Ingredients

| 4 | pork fillets |
| 1 tbsp | Vegeta Gourmet stock powder |
| 1 tsp | lemon rind, grated |
| 1 tbsp | mint, finely chopped |
| 2 | garlic clove, cut in quarters |
| 50 ml | olive oil |
| 20 g | butter |
| 1 cup | warm water |
| Chocolate Sauce | |
| 35 g | dark cooking chocolate |
| 2 tbsp | water |
| 100 ml | cooking cream |
| 1/2 tsp | ginger, grated |
| 1 pinch | white pepper, ground |
| 1 | fresh chilli, finely chopped |
| 2 tbsp | lemon juice |
| 1 tsp | mint, finely chopped |
| 1/2 tsp | Vegeta Gourmet stock powder |
| Side Dish | |
| 250 g | long grain rice |
| 800 ml | water |
| 1/2 tsp | salt |
| 3-4 tbsp | oil |
| 100 g | roasted peanuts, cleaned |
Preparation
- Trim pork fillets of any fat and sinew. Place them in a bowl and sprinkle with Vegeta Gourmet stock. Add lemon rind, mint, garlic and olive oil. Mix well, cover with plastic wrap and let marinade for an hour.
- In a large pan heat up butter and fry the marinated fillets, each side 3-4 minutes. Then continue to braise adding small amounts of warm water over 15-20 minutes of cooking.
- Sauce: In a small bawl break the chocolate into pieces, add water and melt over steam. Gradually whisk in cream, ginger, white pepper, chilli, lemon juice, mint, Vegeta Gourmet stock and add also 2-3 tablespoons of the liquid sauce that the steaks are cooking in. Cook over the steam for a minute and keep on warm place until serving.
- Side Dish: Into boiling salted water add rice and cook on mild heat for 10-12 minutes. Gently stir oil and peanuts in the rice.
Serving
Serve the aromatic pork fillets with peanut rice and warm chocolate sauce.
Tip
For chocolate sauce use dark cooking chocolate with around 70% cocoa.
