Mediteranean Style Green Beans With Veal Steaks
Delicious Mediterranean cuisine has a recipe for everything. String beans will this time accompany veal steaks or fish with flavours of basil, parsley, olive oil and Vegeta stock.

Ingredients

| Green beans in sauce | |
| 500 g | green beans |
| 1 tbsp | olive oil |
| 100 g | onion, finely chopped |
| 1 clove | garlic, crushed |
| 500 g | tomatoes, peeled and diced |
| 1 cube | Vegeta Vegetable stock |
| 2 tbsp | fresh basil, finely chopped |
| 1 tbsp | fresh parsley, finely chopped |
| Veal steaks | |
| 4 | veal fillets (600g) |
| salt for seasoning | |
| 2 tbsp | oil |
Preparation
- Green beans in sauce:
- If using fresh green beans, clean them first: wash them and then using a knife remove the top and bottom of each bean and remove the string which runs along the side. (when using frozen beans, skip this step).
- Cut beans in smaller pieces. Boil them in salted water for 15-20 minutes, drain them and put aside.
- Heat up olive oil and fry the onion. Add garlic, tomato, Vegeta Vegetable stock cube and braise for 10 minutes.
- Add the beans to the sauce, mix well, braise for few more minutes and at the end sprinkle with basil and parsley.
- Veal steaks:
- Tender veal steaks with a mallet and season with salt per your taste.
- Heat up oil in a pan and fry steaks 3 minutes each side.
Serving
Serve green beans warm with fried veal steaks.
Tip
You can also serve this delicious side dish with other meat dishes, as well as with fried or cooked fish.
