Mashed potato created according to this recipe is a sure winner. It is delicious, succulent and that creamy smooth feel will leave you wanting more. And the spring onions, well it’s that simple detail which makes it different.
- Boil the potatoes until tender and then allow to drain. Leave the colander sitting over the pot they just came out of as this will dry the potatoes further and leave you with a creamier mash.
- Meanwhile make some stock by mixing the Vegeta Gourmet stock with the water and bring to the boil, set aside.
- Heat the cream, milk and butter together, while you begin mashing the potatoes.
- Work the hot cream mixture and stock in equal parts into the mash until the desired consistency is reached.
Add spring onions and mix, check for seasoning with salt and pepper, and serve hot.
To achieve a much creamier mashed potato, work quickly, while everything is hot. Once the potato cools it is more likely to develop lumps. The same principal applies to using cold milk, cream or stock.
