Bruschetta Bread

The Italian national colours are recreated in this recipe, using tomato, mozzarella cheese and basil. On toasted bread these can be served as a meal or an entrée.

Ingredients

8 continental bread slices
50 ml olive oil
4 tomatoes, sliced
2 garlic cloves, finely chopped
1 tablespoon Vegeta Gourmet Stock Powder
200 g bocconcini cheese, sliced
fresh basil leaves

Preparation

  1. Toast the bread in hot pan, without oil.
  2. Dribble a few drops of olive oil on each slice and cover to keep warm.
  3. In a bigger pan warm up the left over olive oil, add in tomato slices and sprinkle with Vegeta Gourmet Stock. Cook on both sides on mild heat for about a minute or so.
  4. Cover each bread slice with bocconcini cheese and tomato slices. Sprinkle with garlic and garnish with basil leaves.

Serving

Serves well with salad or as an entrée.

Tip

Sprinkling warm bread slices with a pinch of Vegeta Gourmet Stock Powder prior to adding the topping will make Bruschetta even tastier.
