Risotto With Radicchio

We often serve radicchio in salads, alone or in various combinations. In this recipe we cook it with risotto – you will be pleasantly surprised.

Ingredients

600 ml water
1 cube Vegeta Beef stock
2 tbsp olive oil
50 g onion, finely chopped
250 g rice
50 ml white wine
400 g red radicchio, cleaned and finely chopped
50 g butter
grind black pepper
80 g parmesan cheese, grated

Preparation

  1. Liquid stock: in a pot boil the water and add Vegeta Beef stock cube. Simmer for 5 minutes and set aside.
  2. In a deeper pan heat up olive oil and fry briefly the onion. Add rice and mix. Add wine and radicchio and cover with prepared liquid stock. Mix and cook for 20 minutes.
  3. At the end mix in the butter. Add pepper and salt per your taste.

Serving

Sprinkle with parmesan cheese and serve.

Tip

You can add few drops of lemon juice to risotto at the end of cooking.
