Prawn Salad With Mango

This salad is quick and easy to make, as prawns do not need a lot of preparation. Salad that will seduce everybody with its taste.

This recipe has been developed in accordance with the Heart Foundation recipe development guidelines.

Ingredients

250 g raw prawns, cleaned
500 ml water
200 g lettuce salad, roughly chopped
1 tbsp mint, chopped
1 tbsp basil, chopped
1 mango, cleaned, cubed (250g)
Dressing
80 ml olive oil
1 tsp lemon rind, grated
3 tbsp lemon juice
1 pinch chilli powder
1 tsp Vegeta Delight stock powder

Preparation

  1. Boil the water and cook the prawns for 5 minutes. Remove from water and let cool.
  2. Place lettuce in a bowl, add mint and basil and gently mix through.
  3. Dressing: In a bowl mix olive oil with lemon rind, lemon juice, chilli and Vegeta Delight stock and stir.
  4. Pour few tablespoons of the dressing over the prawns and let stand for 5 minutes.

Serving

On a serving plate arrange the salad, drizzle over with some dressing, add the prawns and mango and then drizzle with remainder of the dressing, then serve.
