Want something different, delicious, no fuss to prepare and yet a meal which everyone will eat, even the kids?! This is it, perfect. The kids will love the cheesy, creamy texture and the grownups will indulge in the delicious taste and aromas as the fork cuts through the crispy top. Yumm!

|1||bunch of thyme|
|3 tsp||Vegeta Chicken stock powder|
|1 tbsp||extra virgin olive oil|
|1 kg||Desiree potatoes, peeled and sliced lengthwise into ½ cm thick pieces|
|4 cloves||garlic, smashed|
|200 g||mozzarella, grated|
- In a saucepan add the cream, thyme and 1 tsp Vegeta Chicken stock, bring to a simmer for 2 min and set aside for later use. Be careful not to allow the bottom to catch and burn.
- Pour a little of the cream mixture in the bottom of an oiled heavy based baking dish, then add a layer of potatoes. Season with Vegeta Chicken stock, sea salt and pepper, add a layer of mozzarella cheese and pour with some cream again. Repeat this process over until the baking dish is full and you have a lovely layered potato bake ready for baking.
- Wrap the dish in aluminium foil and bake in the preheated oven, at 180°C, for approx. 40 min, or until the potatoes are tender.
- Remove the foil, sprinkle the top with a little extra mozzarella and grill for 5-7 minutes until golden brown.
Instead of mozzarella, feel free to improvise with any cheese you like, particularly for a nice golden topping!
