Chicken In A Green Pepper Sauce

If you like to create gourmet recipes, even though you don’t have a lot of time on your hand and you doubt your masterchef’s abilities, then this is a great recipe for you.

This recipe has been developed in accordance with the Heart Foundation recipe development guidelines.

Ingredients

800 g chicken (cut into pieces, remove skin and visible fat)
3 tbsp olive oil
100 g onion, finely chopped
1 tbsp green pepper, conserved
30 ml cognac
1 tbsp parsley, chopped
1 tbsp Vegeta Delight stock powder
300 g tagliatelle pasta

Preparation

  1. In a large deep pan heat up olive oil and fry the chicken pieces until they turn golden brown in colour.
  2. Add the onion and fry for few more minutes.
  3. Cover with cognac, add green pepper, Vegeta Delight stock and simmer on mild heat, covered, for 20 minutes. During the cooking process add little water from time to time, so you keep the juicy sauce.

Serving

Serve sprinkled with parsley and cooked tagliatelle pasta.

Tip

During the cooking process, continually adding little amounts of water will make the sauce thicker.
