Cauliflower And Coconut Sauce

This delicious sauce is a great to serve with chicken, steamed vegetables or rice. It provides a delicious flavour and it is simple to prepare.

Ingredients

3 tbsp oil
40 g onion, chopped
30 g grated coconut
200 ml cooking cream
300 ml water
1 cube Vegeta Chicken stock
300 g cauliflower florets
0.5 l water
1/2 tsp salt
1 tsp corn flour

Preparation

  1. In a saucepan heat up the oil and fry the onion briefly.
  2. Add grated coconut, cooking cream, water and Vegeta Chicken stock cube. Simmer for 10 minutes.
  3. Bring salted water to boil and cook cauliflower florets until they soften, then drain.
  4. Add cauliflower to the coconut mixture and using a hand blender mix it to get a fine smooth sauce.
  5. Add corn flour, mix and boil briefly (1/2 minute).

Serving

Pour over baked or cooked chicken breast fillets and cooked rice. You can serve it hot or cold.

Tip

To make the aroma of the coconut more distinct, fry grated coconut briefly with the onion, before you add other ingredients.
