Burritos

Easy to make and fun to eat – as long as you have a napkin handy. Burritos can be prepared on many different ways, this one has been perfected, why don’t you try it.

Ingredients

50 ml olive oil
200 g onion, chopped
30 g celery stem, chopped
600 g skinless chicken fillets, cubed
300 g fresh tomato, cubed
2 tsp Vegeta Delight stock powder
2 cups water
100-150 ml reduced salt tomato puree
2 cloves garlic, chopped
1 tbsp parsley, chopped
50 g green capsicum, cubed
8-10 pieces soft tortillas
150 g reduced fat mozzarella cheese, sliced
Sauce
100 ml reduced salt tomato puree
100-150 ml no added salt tomato sauce
1 tbsp olive oil
1 tsp Vegeta Delight stock powder
1/2 tsp oregano

Preparation

  1. In a large, deep pan heat up 30 ml olive oil and briefly fry the onion and celery.
  2. Add the chicken, tomato and Vegeta Delight Stock. Fry briefly and continue to braise while covering with small amounts of water from time to time, for about 20 minutes. At the end, stir in tomato puree, garlic and parsley.
  3. In a little oil fry the capsicum and add it to pan with the braised meat.
  4. Warm up the tortillas in a microwave or conventional oven. Then top each tortilla with 1-2 tablespoons of prepared filling, fold in the ends and roll up.
  5. In a pan heat up the rest of olive oil and fry each burrito from all sides. Then cover burritos with slices of mozzarella, cover the pan and remove from the heat. Let stand covered for 4 minutes.
  6. Sauce: In a sauce pot add tomato puree, tomato sauce, olive oil, Vegeta Delight stock, oregano and cook for 10 minutes.

Serving

Serve burritos with the prepared sauce.
