BBQ Chicken Fillets with Refreshing Salad

Ingredients

600 g visually lean chicken fillets, cut into thin steaks
1 tbsp Vegeta Delight stock powder
3 tbsp olive oil
Salad
200 g rocket salad
200 g tomatoes, sliced
1 small rock melon, cleaned and cubed
50 g pine nuts, roasted
Dressing
50 ml olive oil
1/2 tsp Vegeta Delight stock powder
3 garlic cloves, crushed
3-4 tbsp lemon juice
2 tbsp parsley, chopped

Preparation

  1. Sprinkle Vegeta Delight over the steaks and let stand in cool place for an hour.
  2. Wash the rocket, drain well and place in a bowl. Add tomato and melon.
  3. Dressing: In a small bowl combine olive oil, Vegeta Delight, garlic, lemon juice and parsley and mix through.
  4. Brush olive oil over heated BBQ plates and fry the steaks, each side 5 minutes.

Serving

On serving plates arrange the rocket with rock melon and tomatoes, place the chicken steak on top and sprinkle with pine nuts and dressing.

Tip

After cleaning and cutting the melon into small cubes, cool it in refrigerator well, before adding to the rocket salad.
