Baked Leek

You will be delighted by leek in this recipe which is quick to prepare and will win over even those who dislike leek from young age.

This recipe has been developed in accordance with the Heart Foundation recipe development guidelines.

Ingredients

1,5 -2 kg leek
2 tsp Vegeta Delight stock powder
800 g fresh tomatoes, sliced
150 g onion, sliced into rings
4 tbsp olive oil
3 cloves garlic, crushed
2 tsp sugar
2 tsp Vegeta Delight stock powder
150 ml tomato juice
1 tbsp fresh basil, chopped
200 g reduced fat cheese (Edam), grated
100 ml reduced fat cream
100 ml reduced fat milk
1 tbsp bread crumbs

Preparation

  1. Cut the leek lengthways and wash well under running water. Then cut into smaller pieces and place in boiling water. Cook for about 10 minutes.
  2. Drain and sprinkle with Vegeta Delight stock.
  3. In a pan heat up olive oil and fry the onion. Add tomato slices on top of the fried onion, sprinkle with Vegeta Delight stock, sugar and tomato juice. Simmer for 10 minutes and at the end add garlic and basil.
  4. Preheat the oven at 210°C. Grease a deeper oven proof dish well with margarine spread and sprinkle with half of the bread crumbs.
  5. Cover the bottom of the pan with half of the braised tomatoes, sprinkle with the rest of bread crumbs and then cover with a third of cheese. Next layer is the leek, next is a third of cheese and then the rest of tomato.
  6. Cover with milk and cream and sprinkle with the rest of the cheese on top.
  7. Place in the oven and bake for about 20 minutes.

Serving

Cool the leek a little and then serve with salad.

Tip

When preparing this meal, use the white part of leek.
