Even though soups are usually regarded as a winter recipe, this preparation idea is actually perfectly suited for the warmer months. Created using the freshest seafood, tomato and Vegeta Chicken Stock Powder, it’s a great simple and healthy meal.

Ingredients

1 kg mussels, cleaned
30 ml oil
400 g white fish fillets, cut in pieces
3 tablespoons olive oil
3 - 4 middle sized brown onions, chopped
3 garlic cloves, chopped
800 g tomato (canned, chopped)
1/2 teaspoon saffron
2 bay leaf
1 teaspoon dried thyme
2 teaspoons sugar
100 ml pureed tomato
1.5 L water
2 tablespoons Vegeta Chicken Stock Powder
200 ml white wine

  • 1 Heat up the oil in a pan, and cook onion and garlic until onion softens.
  • 2 Add in the tomato (canned), saffron, bay leaf, thyme, sugar, pureed tomato, water and finally Vegeta Chicken Stock Powder. Cook on mild heat for 20 minutes.
  • 3 Then add in mussels and cook covered for another 5 minutes.
  • 4 Finally, add in the fish and wine, and continue cooking until the fish softens.

Serving

This dish can be served with garlic bread.
