Even Feruccio Hržić accepted eco-trend on the marvellous Croatian island of Cres and offers simple, tasty and very healthy traditional food in his picturesque restaurant “Beli”, named after the 4,000 years old village.

Ingredients

1 kg Groper or Snapper
1 lemon
100 ml olive oil
200 ml dry white wine
500 ml water
3 garlic cloves, halved
salt
pepper
bay leaf
1 teaspoon of rosemary
1 kg potatoes
1 tablespoon Vegeta Gourmet Stock Powder

Preparation For this recipe you only need imagination!

  • 1 Clean and wash the fish, drizzle lemon juice over it and leave it for half an hour. Then season with salt and pepper.
  • 2 Put the prepared fish into a baking pan or ovenproof dish, on small amount of olive oil together with potatoes, peeled and cut into bigger pieces. Bake in a preheated oven at 220°C.
  • 3 Combine olive oil, wine, water, halved garlic, pepper, bay leaf, rosemary and Vegeta Gourmet Stock Powder in a pot and simmer for few minutes.
  • 4 When the fish and potatoes are half baked, pour over prepared oil, wine and herb mixture and bake until done. Baking time is approximately 40 minutes.

Advice

If you have a larger fish you can speed up cooking time by making a cut through the thickest part of the fish and place the cut side up while cooking.

Serving

If Groper fish is not availabe you can replace it with Snapper fish of the same size.
